Peppermint Pie

This pie is so easy that I feel silly giving it its own post. Despite its simpleness, everyone always loves it.

Peppermint Pie

1 package oreos, finely crushed in blender
3/4 stick butter, melted
1 recipe hot fudge (recipe below)
1 1.5 qt. carton peppermint ice cream
3-4 candy canes, coarsely chopped

Prepare hot fudge. Set aside to cool.

Mix crushed oreos and butter. Press into the bottom and up the sides of pie plate. Bake at 350 for 10 minutes. Set aside to cool.

When crust and hot fudge are cool, remove ice cream from freezer to soften. While ice cream is thawing, spread about 1/3 cup of the hot fudge in the bottom of the crust. Spoon softened ice cream into pie plate.

To garnish, drizzle top with more hot fudge, and arrange crushed candy canes around the edge and in the center of the pie.

Freezer uncovered for 2+ hours before serving.

Hot Fudge

1 can evaporated milk (12 oz)
1/2 c. butter
1/2 c. granulated sugar
1  c. chocolate chips
1 T. baking cocoa
1 T. vanilla

In a heavy 2-quart saucepan, combine milk, butter, sugar, chocolate chips, and cocoa. Place over medium heat and stir until mixture comes to a boil. Stirring constantly, boil mixture for 5 minutes. Remove from heat and stir in vanilla. Cool.
