Chocolate Muffins

These might be the only muffins that my seminary kids adore. They are so great!

Chocolate Muffins

1 3/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup cocoa
1 1/4 cups sugar
3/4 cup chocolate chips, plus 1/4 cup for sprinkling
1 cup whole milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
2 tsp vanilla

Preheat the oven to 350F. Grease muffin tin well.

Chop up the chocolate chips into smaller pieces. Do some of it finely, and leave some of it chunky.

Put the flour, baking powder, baking soda, salt, cocoa, sugar, and the 3/4 cup chopped chocolate chips into a large bowl. Mix the milk, oil, egg and vanilla together in a small bowl. Mix the dry and wet ingredients together, mixing just until combined. Do not over-mix. Spoon into the prepared muffin pan. Sprinkle the remaining 1/4 cup chopped chocolate chips on top.

Bake for 18 minutes or until the muffins are dark, risen and springy. The top will be a little sunken-in where you sprinkled the chopped chocolate chips.
