Peanut Butter Pie

This is one of Peter’s favorite pies. He requests all the time over other pies. It’s super easy. I make it for Pie Night every year, and it’s always one of the few pies that completely disappears.

Peanut Butter Pie

About 1 cup homemade hot fudge
1 package Oreos
1/2 cup sugar
8 oz. cream cheese
1 cup peanut butter
1 tsp. vanilla
1 tub cool whip (not the real stuff, just cool whip)

Make hot fudge. Set aside to cool.

Making your own oreo crust is always, always better than buying one. The store-bought ones not only not as good, but they are too thin and your crust/filling ratio will be all messed up. Blend all but 8-9 Oreos in blender. The cream should help it stay pretty moist, but if it doesn’t stick together very well add a bit of butter. Press Oreo crumbs into a pie plate. Make it nice and thick.

Spread about 1/2 c. of the cooled hot fudge in the pie plate. Cover the sides and bottom of the crust. In mixing bowl, cream the cream cheese and sugar. Add peanut butter and vanilla. Mix well. Fold in cool whip. Pour filling in pie plate and refrigerate at least 2 hours.

Before serving, drizzle each piece with hot fudge and remaining Oreos, or reeses peanut butter cup pieces.
