French Silk Pie

DSC_0276I found this recipe in an old binder of recipes that my mom put together when I was a kid. It’s been a family favorite ever since. Beware, it has uncooked eggs.

 

 

 

French Silk Pie

1 oz. baking chocolate
1/2 cup butter
3/4 cup sugar
1 tsp. vanilla
2 eggs

Melt baking chocolate, and cool. Meanwhile, cream butter and sugar. Add chocolate, vanilla, and beat well. Add eggs, beating for 5 minutes between each egg. Pour filling into baked pie shell and chill at least 2 hours. Serve with whipped cream and chocolate curls.

Note: I always double this, and I triple it if I’m using a large pie plate.
