This recipe is from my Betty Crocker cookbook. It’s a very standard chocolate cream pie, and it’s delicious.
1 1/2 cup sugar
1/3 cup cornstarch
1/2 teaspoon salt
3 cups milk
2 oz. baking chocolate (cut up)
4 egg yolks, slightly beaten
2 tsp. vanilla
Sweetened whipped cream
Stir together sugar, cornstarch, and salt in saucepan. Gradually stir milk and chocolate into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
Immediately stir at least half of the hot mixture gradually into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat.
Blend in vanilla. Press plastic wrap onto filling in saucepan and cool to room temperature.
Pour cooled filling in baked pie crust. Chill pie thoroughly, at least 2 hours. Just before serving, top pie with sweetened whipped cream and chocolate curls.
