Brownie Pie

This is one of my all-time favorite pies. I got the recipe from my friend Kristen’s grandma back when I was in college. She called it Upside Down Hot Fudge Pie (or something like that), but Peter started calling it Brownie Pie and it stuck with my family. We LOVE it. I always make it for Pie Night and it’s always a favorite.

 

Brownie Pie

Melt and stir until smooth:
2/3 cup butter
1/3 cup high-quality cocoa (my favorite is Cacao Barry)

Beat together:
2 eggs
1/4 cup milk
1 tsp. vanilla

Add cocoa mixture. Beat with whisk until slightly thickened and smooth.

Mix:
1 cup brown sugar
1/2 cup sugar
1 tbsp. flour
1/8 tsp. salt

Add to cocoa mixture until smooth. Pour into pie shell. Bake at 350 for 30-35 minutes. The middle will be runny. Let sit for 2 hours.
