Apple Butter Pumpkin Pie with Streusel Topping

I found this pie on Tidy Mom and made it for Pie Night 2010. I wasn’t a huge fan, but it got fave reviews from everyone else.

Filling:
1 c. pumpkin
1 c. apple butter
1/4 c. packed brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. salt
3 eggs, lightly beaten
1 c. evaporated milk

Streusel Topping:
3 tbsp. butter
1/2 c. flour
1/2 c. brown sugar
1/2 c. chopped pecans

Preheat oven to 375. In large bowl combine filling ingredients in order given.

Fillings: Mix all ingredients together in order given.

Streusel topping: Combine brown sugar and flour; cut in the butter until crumbly. Stir in chopped pecans. Set aside.

Pour filling into into unbaked pie crust. Bake 50 to 60 minutes or until knife inserted two inches from center comes out clean.

Remove pie from oven and sprinkle streusel over pie filling. Return  pie to the oven, cover crust with foil, and bake for an additional 15 minutes. Cool completely, about 1 hour.
