These cookies are much better than I expected them to be, given the fact that they are cake mix cookies. They are officially in my cookie rotation. And aren’t they pretty for Christmas?
This recipe is adapted from Whipper Berry.
Red Velvet White Chocolate Chip Cookies
2 sticks butter, softened
1 box red velvet cake mix
1 cup all purpose flour
1 egg
2 2/3 cups white chocolate chips, divided
1 teaspoon crisco
Preheat oven to 350 degrees.
Beat butter until soft and fluffy. Slowly add the cake mix and flour. Once that is combined, add the egg and mix thoroughly. Add 2 cups white chocolate chips and mix until well combined.
Form dough into one inch balls, bake at 350 for 8-10 minutes. When you take them out of the oven, drop cookie sheet on counter a few times to flatten cookies.
Microwave 2/3 cup white chocolate chips for 1-2 minutes. Stir in crisco until melted. Place melted chocolate into a pastry bag with a very small tip. Drizzle chocolate over cooled cookies.
